‘Bah Chang Mahasetthi’ Recipe, Rich in Ingredients, Passed Down to the Third Generation

Trang: The 3rd generation has transformed the traditional ‘Bah Chang Mahasetthi’ by packaging it in boxes instead of wrapping it in bamboo leaves. This innovation focuses on using high-quality ingredients that are nutrient-rich and considered auspicious for festivals. It can be stored for up to two years, generating an income of 20,000-30,000 baht per month.

According to Thai News Agency, at Botanic Caf© Trang, located in the Southern Botanical Garden (Thung Khai), Yan Ta Khao District, Trang Province, Ms. Sutanat Niludomsak, 39, the caf©’s owner, showcased the creation of ‘Bah Chang Mahasetthi.’ This recipe, inherited from China, has been preserved over three generations. The caf© prioritizes the use of quality ingredients such as white glutinous rice known for its slender and aromatic grains, cooked with peanuts. The dish is topped with special stewed pork belly, organic egg yolks, authentic Chinese sausage from Korat, dried shrimps, mushrooms, and ginkgo nuts. Each box is a complete meal, containing all five food groups, which include grains, meat, and protein, making it both nutritious and an auspicious dish for the Chinese community during festivals like New Year, Chinese New Year, and the Moon Festival.

The innovative approach of presenting Bak Chang in a box, priced at 60 baht, makes it convenient for consumption. Due to the richness of ingredients, obtaining large bamboo leaves was a challenge, prompting this packaging change. The product is well-received and shipped across Thailand, with a shelf life of up to two years when frozen. The caf© successfully sells over 300 boxes monthly, earning around 20,000-30,000 baht, excluding revenue from new beverages like Longan Americano made from premium golden longans from Chiang Mai, and other offerings like Coconut Americano and Young Coconut Fresh Milk Cake. The caf© operates from 8:30 a.m. to 6:00 p.m., closed on Wednesdays.

Ms. Chutanat expressed that ‘Bah Chang Mahasetthi’ is a signature dish since the opening of the caf© seven years ago. Passed down through her family, she represents the third generation to uphold the tradition. She emphasizes organic and well-chosen ingredients to ensure the dish’s quality and auspicious nature. With its balanced flavors-neither too oily, sweet, nor salty-the dish is well-loved for its health benefits and the good fortune it is believed to bring.
